Actually, since moving to Tokyo I have been very interested in Ramen. This week , I started to take a ramen class. In the class we learned how to make ramen noodles from scratch as well as the soup, eggs, and pork.

    初めて東京に引っ越したときから、ラーメンに興味を持っていました。今週はラーメン教室に通い始めました。教室では麺、スープ、卵、そして豚肉（チャーシュー）作りまで習いました。

    If you find yourself in shinjuku, stop by the ramen shop called “fu’unji”.. you’ll thank me later 😄

    @smashbridges Thanks! My office is in Shinjuku. I just went to Nagi in Golden Gai. Popular after drinking spot, but, damn, it’s way too good to be considered just that. It’s niboshi (Sardine) style. I think I favor super traditional forms like shoyu (Soy Sauce) and Niboshi. Thanks for the info. I’ll look into it.

    Well if you like shoyu, it might not be for you. About 15 min walk from goldengai is fu’unji. They have a very hearty tonkotsu. Cooked over the course of a couple days, it’s my absolute favorite bowl. But it is very heavy where shoyu is quite light. I appreciate the work that goes into the broths! (I always recommend the dipping ramen for added concentration of flavor) hahah...
