My Mum's Fijian Curry ☺️
My Mum learned how to make a Fijian

styled curry when she would go to Fiji for holiday's as a young child. The recipe has evolved over the years and sometimes I desperately crave her curry ❤💕 It reminds me of when I was growing up, we would have this curry whenever family would visit or big events.
Although it's a humble dish, I have a lot of happy memories surrounded by it. Visiting my Uncle whom lives in Newcastle is one of them.
His daughter and I are very close... She lives far away and we can't see each other because of the current state of things. I miss her so much.
