Good evening everyone. 😁 Is everyone doing ok?
So, today the weather was quite nice. It was rather warm with the wonderful sun shining through with a few clouds hanging up in the great blue sky.🌤
So, on my prior post some nice HelloTalk friends expressed their concern that I was eating unhealthy junk food at Jack In The Box, 🥴🤪 and need to eat healthier foods. I agree, but mentioned that I live in an old historic town with not many restaurants or super healthy places to dine at. ☹️ Also, I have to cook all my meals by myself, and I was really tired and hungry the other day when I went to Jack In The Box.
She is right, so I thought OK, time to make a healthier dinner! 💪
Thus, I decided to make a summer squash dish. Incidentally, this was my first attempt at a vegetarian dinner!🤪
I made the casserole dish with the following items: yellow summer squash, cauliflower, onions, ritz crackers, four different types of cheese (cheddar, Swiss, Monterey jack, havarti), eggs, milk, butter, salt and pepper. I cooked it for 20 minutes @ 400 degrees. Topped it off with some chopped cilantro and parsley. A side salad. Strawberries and blueberries in a separate bowl. And a glass of lime water.
I was a bit worried the summer squash casserole might turn out kind of funky since this was very first vegetarian meal!😵😜🤢🥴😂
Fortunately, it turned out not too bad! 😳🤪😁😋👏👍
The nice thing with this vegetarian meal that I made is I helped myself to seconds! 👍👍
